Wester Ross are one of the pioneers of Salmon Production in Scotland; established in 1977, we now produce in excess of 1,000 tons per annum.
Wester Ross operate a fully integrated production cycle, through painstaking control of quality from egg to harvested salmon, 36 months later.
Wester Ross have established an enviable reputation for high quality Scottish Salmon serving the most discerning clientele throughout the UK, Europe and Japan.
Salmon reaches the supermarket, fishmonger, restaurant, hotel or salmon smoker within 48 hours of being harvested.
There was a time not many years ago, that Scottish Salmon was regarded as a very expensive luxury, an indulgence only to be enjoyed on special occasions. Today the situation is quite different with Scottish Salmon now available to a wider market at an affordable price.
Scottish Salmon are offered:
- Whole (round/gutted)
- Filleted (various specifications)
Whole Scottish Salmon
Salmon are harvested on West Coast sites and then transported to Dingwall (Easter Ross) for processing.
Strict quality control at all stages of the process ensures a consistent high quality Salmon is packed ready for despatch to the customer.
Salmon are washed, gutted, graded then packed in catch-weight 22-25kg. polystyrene boxes; special airfreight packaging can be used if required.
Grading can be in 0.5 kg. or 1 kg. increments to suit; currently we are offering 1 - 8 kg. sizes.
Salmon are ready for despatch from processing plant within 12 hours of harvest being completed.
Scottish Salmon Fillets
Whole salmon are processed two days after harvest, to allow for rigor period.
Currently we are hand-processing only; we have found this to be the best method of producing highest yield with most consistent quality fillet.
Fillets are offered to the following specifications:-
- TRIM A - Back bones off, belly bones off
- TRIM B - in addition - collar bones off, back fins off, belly fins off, belly fat off
- TRIM C - in addition - pin bones removed
- TRIM D - in addition - fully trimmed
- TRIM E - in addition - skin off
Currently we are able to offer fillets from 600 grams - 2,700 grams; usually packed in catch-weight 16-18 kg. boxes.
